Damper – Bread with no yeast!!! [GF DF EF NF VEG V]This is a serious game-changer! I haven't made it for a while because I am making GF Bread every other day for the family, but at one point I was making this 2-3x a week for hubby - it takes 25 minutes, and no yeast is required! Knowing we have a yeast shortage during this Covid-19 Crisis - check this out, you can have your bread, and eat it too! I have made it into toasted sandwiches, pizza base, burger (as in the featured image, not a typical burger bun), we have had it on the side with Chicken Noodle Soup... so easy, so versatile! This recipe is gluten-free, dairy-free, egg-free and nut-free; it is also safe for those who follow a vegan diet.
Sheetpan Pancakes with Berry Drizzle [GF DF NF VEG]My husband wanted pancakes for breakfast one weekend, and I had remembered reading somewhere on IG about sheetpan pancakes - so that morning I did a bit of research, and found a few different recipes, and chose to use and adapt the recipe I found from: www.eatingwell.com. Best decision ever - 100% success rate with the family, I wasn't slaving over a hot frying pan for ages, and there were leftovers for morning tea! This makes a HUGE quantity, you may want to halve it the first time you make it unless you're happy to eat it for morning tea like us! This recipe is gluten-free, dairy-free and nut-free; it is also safe for those who follow a vegetarian diet.
Buckwheat and Berry Porridge [GF DF EF NF VEG V]This is a very basic gluten-free and dairy-free porridge substitute, the buckwheat grouts will need to be soaked, and that is the majority of the prep time - set it aside the night before, and then 20 minutes in the morning, you have a thick, warm porridge for these cooler mornings! This recipe is gluten-free, dairy-free, egg-free and nut-free; it is also safe for those who follow a vegan diet.
Crockpot Immune-Boosting Chicken Noodle Soup [GF DF EF NF]This recipe is fantastic for clearing out the bottom of your veggie draw in your fridge, you can basically use any veg at all, and whatever noodles or pasta you have on hand! It's a great way to use up a roast chicken as well, as you don't need a lot of chicken in the soup to call it 'Chicken Noodle'! The ingredients are just guidelines, but it is totally up to you what veggies you use, and how much... even the herbs and spices - just keep taste testing, and adjust according to your family's likes! This recipe is gluten-free, dairy-free, egg-free and nut-free.
Gluten Free Sandwich Bread [GF DF NF VEG]This is a recipe I came up with about five years ago, I adapted about 3 different recipes to make it work for our family... back then I had the time to experiment, and my husband had been getting frustrated with the price of gluten-free bread at the supermarket and was no longer enjoying the original bread I had been baking. So it was back to the drawing board, and after a few unsuccessful attempts at different recipes - I came up with this, it suited our needs, and was half the price of the supermarket loaves. Unfortunately once I started working full-time, all attempts at bread making went out the window - I literally haven't made any more loaves until lockdown this year! The prep time includes the time needed for the bread to rise (60 minutes). This recipe is gluten-free, dairy-free and nut-free; it is also safe for those who follow a vegetarian diet.
Hotcross Buns [GF DF NF VEG]This recipe is adapted from the Edmonds Hotcross Buns recipe, and I have only made it the once! I have never had the time to make hotcross buns from scratch before, so the novelty of having an Easter at home, and so much time has meant I have had a chance to try things I have never done before! The prep time includes the time that is required for rising, so you're not going to be in the kitchen that entire time, I can guarantee! They are denser than the traditional, but my family all gave me the thumbs up, and the flavour is amazing! This recipe is gluten-free, dairy-free and nut-free; it is also safe for those who follow a vegetarian diet.
Lemon Shortbread [GF DF EF NF VEG V]I have been going through an old hand-written recipe book from when my husband first went gluten-free and my daughter was dairy-free, so many treasures in there! Unfortunately, I have not written where I got these recipes from, or whether they are mine or adapted! So I can't give credit, but I also can't take credit... but I am pretty excited by this find, as there are so many recipes I had forgotten about, and am excited to retry and share with you all! This is the second recipe, and I made this today - my kids and hubby couldn't get enough of it, I was literally smacking their hands away! This recipe is gluten-free, dairy-free, egg-free and nut-free; it is also safe for those who follow a vegan diet.
Peppermint Slice [GF DF EF NF Veg V]This is one of the first recipes that I ever adapted into a gluten-free recipe, and I have no idea where I got it from - I wrote it up in a book about 10 years ago now! This picture is particularly bad, I will make it again soon and rephotograph it, this was taken about 5 years ago! The white peppermint icing can be made green with green food colouring (which is what I normally do), but it makes no difference to the taste! This is one of the simplest recipes, and is one that the kids can make, or help you make, over this time of enforced lockdown! This recipe is gluten-free, dairy-free, egg-free and nut-free; it is also safe for those who follow a vegan diet.

About Me

Hi my name is Elizabeth Collins, and I have been where you are; I remember the intense overwhelm when my husband was first diagnosed with gluten and dairy intolerances, followed by fructose malabsorption! Both our children also had food intolerances at a young age (but have since out-grown them), and the fear of not knowing what was, and was not safe, was confusing and frightening. I was not a competent cook, nor did I enjoy being in the kitchen.
I have since built up a large repertoire of family friendly recipes, that cater for gluten and dairy intolerances, and now really enjoy my time in the kitchen. These meals are enjoyed by everyone in our family, as well as our guests. No more cooking different meals, it’s one meal for all in our house!
