This is a total game-changer, seriously, I didn't even know you could make mock cream without coconut! This has got to have been one of the best recipes I have found for Christmas so far... it is quick, easy and totally delicious! I did try doubling this recipe, but I didn't leave it to cool properly - so it didn't thicken! I will be trying a few variations of this recipe over the next while, and will post them here as I go!

 1.50 tsp Cornflour
 0.50 cup DF Milk (I used soy milk)
 2 tbsp DF Spread (I used nuttelex)
 2 tbsp Sugar (we used raw and icing sugar)
 1 tsp Vanilla Essence

Mix the cornflour with the DF milk, until it has a smooth consistency and pour into a small saucepan.

Bring it to the boil - stirring constantly, then turn it down and allow it to slow boil (or simmer) for the next 3-4 minutes, still stirring constantly.

Remove from the heat, and let it cool COMPLETELY (a very important step)!!!!

While the milk/cornflour mixture is cooling - cream the DF spread and sugar in a small bowl.

Slowly add the milk/cornflour mixture into the creamed sugar/spread mixture, beating on high constantly.

Add the essence, and keep beating on high, until it looks like 'real' whipped cream!

It doesn't take long to beat it into whipped cream, but you do need to beat it on high!
