This is based on a recipe that was shown on TV3 by Bex Davies, originally airing about 8 or 9 years ago, and started out as gingerbread. Over time we have adapted it to suit ourselves, and it is now a firm favourite for the lunchboxes.

 125 g DF Butter/Spread
  cup Golden Syrup
 ½ cup Brown Sugar
 2 ¾ cups GF Flour
 2 tsp Xanthum Gum
 5 tsp Ground Ginger
 2 tsp Vanilla Essence
 1 tsp GF Baking Powder

Cream DF butter and sugar, add golden syrup and vanilla essence.

Add the rest of the ingredients, and keep *mixing until it forms a ball.

* I use a cake mixer, I have done this in a food processor before but it is such a large recipe that it almost ruined my processor. If you don't have a cake mixer, then I would recommend halving the recipe and seeing how you go.

Roll out between two pieces of baking paper - you can make thick round biscuits, or if you roll it quite thin, then the kids can help with cookie cutters (like the picture).

Bake at 180oC for 10-12 minutes (depending on the thickness of your cookies).

Leave to cool on a wire rack.

You can make up to 40 cookies if you roll quite thin, otherwise about 30-35...
