This is a real 'comfort food', and tastes great! I found the original idea in the book "Plant-Based Meal Prep" by Stephanie Tornatore and Adam Bannon; but I have obviously put my own twist on it! It is such a quick and easy dinner, that can literally be made in 20 minutes flat! I made a large portion, to make sure there were left over's for lunch the next day - so this makes enough for 6, you can cut out a tin of lentils if this is too much!

This recipe is gluten-free, dairy-free, egg-free and nut-free; it is also safe for those who follow a vegan diet.

 1 Packet of GF & DF Taco's (we use the Countdown GF Brand, but please check ingredients for your safety))
 2 Tins of lentils
 1 Tin of Black Beans
 1 Tin of tomatoes
 10 Big leaves of Silverbeet (or spinach) - chopped
 2 Medium Carrots - grated
 1 Punnet of Cherry Tomatoes
 1 Spring Onion - chopped
 0.50 cup Red Wine
 70 g Tomato Puree
 2 tbsp Worchestershire Sauce
 Salt n Pepper to taste
 0.50 cup DF Cheese - optional (we use Zenzo Cheddar found at Countdown; most like real cheese)

Throw everything together in a big frying pan except the tacos, cherry tomatoes and the cheese.

Once it has heated through, spoon some into the taco's, sprinkle some grated cheese on top, and then microwave for 30 seconds on high.

Add the cherry tomatoes as desired:

- You can chop them up small and add them to the taco mixture if you prefer,
- Or just pop them in the top of the taco but under the cheese,
- Or cut them up and place on the plate as a side as we did!
