This recipe is my very own recipe - it is quick and simple, and seriously tasty! Considering I have never baked a Christmas Cake before, I am pretty stoked with how this came out! Team it with our mock cream recipe, and you have an almost-traditional Christmas snack to offer guests!
Turn the oven onto 150oC, and live a large round cake tin with baking paper, and then grease with DF spread or olive oil.
In a large saucepan combine:
- Mixed dried fruit **
- Orange Juice
- Lemon zest & juice
- DF spread
- Brown sugar
- Spices
- Vanilla Ess
Warm the above ingredients over low heat until combined, and leave to cool.
Beat the three eggs, and once the dried fruit mixture has cooled, mix the eggs into this.
Sift the GF flour, baking powder and xanthan gum into the fruit and egg mixture, and then fold through gently.
Pop into the oven and bake at 150oC for 1.5 hours - check, then bake longer if necessary; I found the 1.5 hours was fine for our cake.
This cake is quite moist on the first day, but dries up a little bit overnight; however, my Mum tried it the second day and said it was 'perfect', so it is still pretty good!

- 150g dried cranberries
- 200g raisins
- 150g prunes
- 100g dates
