This is one of the first recipes that I ever adapted into a gluten-free recipe, and I have no idea where I got it from - I wrote it up in a book about 10 years ago now! This picture is particularly bad, I will make it again soon and rephotograph it, this was taken about 5 years ago! The white peppermint icing can be made green with green food colouring (which is what I normally do), but it makes no difference to the taste! This is one of the simplest recipes, and is one that the kids can make, or help you make, over this time of enforced lockdown!

This recipe is gluten-free, dairy-free, egg-free and nut-free; it is also safe for those who follow a vegan diet.

 1 cup GF Flour
 1 cup Coconut
 1 tsp Xantham Gum
 125 g DF Spread
 0.50 cup Sugar
 1 tbsp Cocoa
Peppermint Icing
 1.50 cups Icing Sugar
 1 tbsp Melted DF Spread
 23 Drops of Peppermint Essence (or as desired)
 23 tbsp Warm Water
 Green Food colouring if desired
Chocolate Icing
 1.50 cups Icing Sugar
 2 tbsp Cocoa
 23 tbsp Warm Water
 1 tbsp Melted Butter

Preheat oven to 180oC

Melt the DF spread, then mix with all the other base ingredients (GF flour, coconut, sugar and cocoa).

Press into a slice tin, and then bake for 10 minutes.

Remove and leave to cool...

While the base is cooling - make the icing:

Peppermint:
Mix all the ingredients together, but start with 1 tablespoon of water - adding more if required. Add green food colouring at the end, and mix through to the desired colour!

Chocolate:
Mix all ingredients together (as above), including the cocoa. Adding 1 tablespoon of warm water at a time, until desired consistency is met.

Once the base is cool - cover with the green peppermint icing.

Place in fridge to harden (a good 30 minutes).

Once the peppermint icing has hardened, then gently spread the chocolate icing on the top, smoothing out as you go.

Pop back in the fridge for another half an hour, allowing the chocolate icing to harden.

Slice and enjoy xxx
