My husband wanted pancakes for breakfast one weekend, and I had remembered reading somewhere on IG about sheetpan pancakes - so that morning I did a bit of research, and found a few different recipes, and chose to use and adapt the recipe I found from: www.eatingwell.com. Best decision ever - 100% success rate with the family, I wasn't slaving over a hot frying pan for ages, and there were leftovers for morning tea! This makes a HUGE quantity, you may want to halve it the first time you make it unless you're happy to eat it for morning tea like us!

This recipe is gluten-free, dairy-free and nut-free; it is also safe for those who follow a vegetarian diet.

 2 & 2/3c GF Plain Flour
 3 tsp Xanthan Gum
 1.50 tsp GF Baking Powder
 1.25 tsp Baking Soda
 0.50 tsp Salt
 3 cups Buttermilk*
 3 Eggs
 1 tbsp Brown Sugar* (any sweetener will do - maple syrup, honey, golden syrup etc)
 0.25 cup Melted DF Spread
Berry Drizzle
 2 cups Frozen Berries
 2 tsp Brown Sugar

Turn the oven onto 180oC (I didn't use fanbake, but you could - just keep a closer eye on it).

Grease a slice tin, or cake tin - whatever you have on hand to use. I did mine in a small slice tin and cooked half the mixture at a time.

If you don't have buttermilk, or can't use it due to allergies - an easy fix is to pour the amount of DF milk required (in this case - 3 cups) into a small jug, then add a teaspoon of vinegar or lemon juice per cup of milk, and set it aside for a few minutes to thicken up. I use Apple Cider Vinegar, and I actually use the bottle cap as my measure, it's close enough to a teaspoon I say!

Pop 1/4c DF spread into a small bowl, and microwave for 30 seconds or until melted - put aside as well.

Place all the dry ingredients into the bowl of a cake mixer:
- Flour
- Xanthan Gum
- Baking Powder
- Baking Soda
- Salt
- Sugar (if using a sweetener as opposed to sugar - add this with the wet ingredients instead)

Gently mix together by hand.

Add the wet ingredients to the dry:

- 3 eggs
- Melted butter
- Buttermilk
- Sweetener (if not using sugar)

Turn the mixer on gently, and mix well together - I needed to scrap down the sides and the bottom, to ensure all the flour was incorporated.

Pop the berries into the microwave for about 1-2 minutes - warm enough to squash together and stir the sugar through, so it is more like a berry pulp.

Pour half the mixture into your slice dish, and then add half a cup of the berry drizzle into the mixture and stir through as much as you desire.

Pop into the oven, and cook for 15 minutes - check at 12 minutes if you have fanbake on.

If it isn't cooked in the middle, just keep checking every 4-5 minutes - my first half took only 15 minutes to cook, the second took 20-25 minutes (I obviously didn't halve my mixture very well, eeeek).

Slice each pancake into six, and serve with more of the berry drizzle and DF / GF yoghurt, or fresh fruit.

This mixture has a light pancake / cake type consistency, and is just as nice served cold later in the day!
