Corn and Courgette Fritters [GF DF NF VEG]This recipe is based on my Bacon and Corn Fritters - they were so good, that my son took two cold ones to school the next day for lunch! I doubled the recipe, and popped a few in the freezer for hubby to have quick and easy lunches available. This recipe is gluten-free, dairy-free, and nut-free; it is also safe for those who follow a vegetarian diet.
Courgette and Cannellini Bean Balls with Homemade Tomato Sauce [GF DF EF NF VEG V]This recipe is inspired by a recipe in the book "The Vegetarian Kitchen", and is a great way to use excess courgettes up; I made them quite spicy, so while my kids ate them that night - they weren't keen on having any further, however, my husband and I really enjoyed them! Cut down on the spice if your family isn't keen on hot food! Instead of potatoes as a side dish with this meal, it also goes well with rice - place the balls on top of the rice, and pour the tomato sauce over both. This recipe is gluten-free, dairy-free, egg-free and nut-free; it is also safe for those who follow a vegan diet.
Spicy Courgette Bread [GF DF EF NF VEG V]This is based on a recipe in the book "Decadent Gluten-Free Vegan Baking" by Cara Reed, I made a double batch as we had so much courgette and it was amazing! I wish I had cut up and frozen the second loaf, as unfortunately, we didn't manage to get through it! I did find it was beautiful and moist the first day or two, but dried up a bit after this... however, 45 seconds in the microwave fixed that! This recipe is gluten-free, dairy-free, egg-free and nut-free; it is also safe for those who follow a vegan diet.
Ham & Veg Kebabs with Potato Salad [GF DF NF]I made these kebabs to use up our Christmas ham, however, you can swap out the meat for chicken pieces or sausage - whatever works for you! The potato salad recipe is my own that I have been making for YEARS, it is one that my family and my in-laws all ask me to bring when we have family meals, and one I take to almost all potlucks! I never have any left to bring home!! This recipe is gluten-free, dairy-free and nut-free.
Sticky Salmon and Pasta [GF DF EF NF]This is a really simple recipe that is seriously tasty; it is adapted from alittlebityummy.com and is a hit every time I make it! I change up the green veggies depending on what is available, and as it only uses one fillet of salmon between 4-5 people, it is relatively cheap on the pocket. This recipe is gluten-free, dairy-free, egg-free and nut-free.
Pork and Fennel Meatballs on Polenta [GF DF NF]This recipe was adapted from taste.com.au; I almost didn't make it the first time as I was out at an after school activity with my daughter, that took a good half-hour longer than originally planned. However, I decided (as I had the meat defrosted and all the ingredients ready) that I would make it anyway... and it was a hit! Not only was it on the table in just over 30 minutes, but it was devoured by everyone! A new family favourite! This recipe is gluten-free, dairy-free and nut-free.
Mediterranean Tuna Salad [GF DF EF NF]Super simple, and a quick and easy summertime meal... my kids are big tuna lovers, so anything like this goes down quickly, easily and with minimal fuss! This recipe is gluten-free, dairy-free, egg-free and nut-free.
Chicken Kebabs with Buckwheat Salad [GF DF EF NF]This is a quick and easy meal for the summer evenings, especially if you have a BBQ - however, don't let it stop you if you don't have one (we currently don't have a BBQ). The buckwheat adds a bit of a twist to the traditional lettuce salad and a bit of texture with a slight crunch to it! This recipe is gluten-free, dairy-free, egg-free and nut-free.
